Grilled Chicken Fillet Recipe

Ingredients:
2 boneless chicken fillets
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper (adjust to taste)
Juice of 1 lemon
Chopped fresh parsley (for garnish, optional)
Instructions:
Prepare the Marinade:
In a bowl, combine the olive oil, minced garlic, paprika, dried oregano, salt, black pepper, and lemon juice. Mix well to create the marinade.
Marinate the Chicken:
Place the chicken fillets in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each fillet is coated evenly. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or ideally, 1-2 hours to allow the flavors to penetrate the chicken.
Preheat the Grill:
Preheat your grill to medium-high heat. If you're using a charcoal grill, make sure the coals are hot and glowing.
Grill the Chicken:
Remove the chicken fillets from the marinade and let any excess marinade drip off. Place the fillets on the preheated grill. Grill each side for about 6-8 minutes, or until the internal temperature of the chicken reaches 165°F (75°C). You can also make crisscross grill marks by rotating the fillets 45 degrees halfway through cooking on each side.
Basting (Optional):
During the last few minutes of grilling, you can baste the chicken with a bit more of the marinade to enhance the flavor. Make sure to discard any marinade that came into contact with raw chicken.
Check for Doneness:
Use a meat thermometer to check the internal temperature of the thickest part of the chicken fillet. It should read 165°F (75°C) to ensure the chicken is fully cooked and safe to eat.

Once the chicken fillets are cooked, remove them from the grill and let them rest for a few minutes. This allows the juices to redistribute, keeping the chicken moist. Garnish with chopped fresh parsley if desired.
