Made with just 200g red lentils soaked overnight, blended with 400ml water, a pinch of sea salt, and a dash of fresh grated nutmeg. Cooked to perfection in a hot cast iron pan with a hint of duck fat, these pancakes are a delight for the senses.
Pairing possibilities are endless, but my favourites include a dollop of creamy full fat coconut yogurt, a sprinkle of fresh herbs, avocados, foie gras pate, or a side of crisp, leafy greens.
