Recipe vegetable crumbs / official and traditional Iranian food
Qormeh Sabzi is one of those traditional, famous, delicious and favorite dishes of all Iranians.
ingredients:
***500 grams of meat
1 large onion
Oil 250 g
5 dried lemons
1 cup red beans or pinto
Vegetables (leeks, parsley, coriander, fenugreek and mint) 1 kg
Turmeric in the required amount
Salt as needed
Pepper as needed ***
Soak the beans in a suitable container and change the bean juice several times so that the beans become softer and bigger and swell.
Peel a squash, grate it and squeeze the juice.
In a suitable pot, fry the onion in oil, then add the meat and fry until the meat changes color. In the next step, add turmeric and black pepper to the meat and onion and fry until the spices are completely absorbed by the meat and onion. Then we add water to these ingredients and heat it.
Next, drain the beans and add the washed meat and onion twice
Next you need your vegetables which include (leeks, parsley, coriander, fenugreek and a few mint feathers
Clean and then wash them and let the vegetable juice dry, then chop the vegetables finely) and fry for about 15 minutes until the vegetables are dark and red.
Now it's time to add fried vegetables to your stew.
It's time to add dried lemons to the food (if the lemons are bitter, your vegetables will taste bitter). Be sure of the quality of the lemons.
Now we wait for the food to be cooked. When we notice that the food is cooked, an oily surface forms on the food.
You can taste this food with rice.

I don't eat meat but the vegetables and herbs you use in this recipe made me interested about this dish. Im wondering if this could be veganized. Is your cuisine rich in meat dishes or do your have vegetarian options as well?
